Instructors

Carl Shavitz
Founder/director of the Artisan Bread School. An artisan baker, he makes breads for restaurants and specialty shops in the Cambridge area. Carl trained at The Village Bakery in Melmerby Cumbria and Ballymaloe Cookery School in Cork, Ireland. He worked at The Village Bakery and The Three Crowns Inn in Herefordshire before becoming an independent artisan baker.


Emmanuel Hadjiandreou is the multi-award winning artisan baker of Judges Bakery, a one-stop organic shop and bakery in Hastings, Sussex. In less than a year Judge's won top prize, Best New Store, at the Natural Products Awards - the natural product industry's Oscars. Emmanuel began his baking career in South Africa. He came to London, where he first worked at the Savoy Hotel with Anton Edelmann, and then for Gordon Ramsay. He moved to Flour Power, one of the first fully organic bakeries in London using artisan techniques. Emmanuel won the 2004 Soil Association award for his sourdough bread while working at Daylesford Organic Farm Shop, Gloucestershire.
